Another rare breed. Why? Because 99% of turkeys raised in the United States are a single industrial breed - incapable of reproducing naturally, which has practically eliminated the demand for all other varieties. Which is why Ghengis is not destined for the table himself...he has earned the position of flock sire.
 
We raise Bourbon Red turkeys as breeding stock and for the table. They take longer to finish than your grocery store variety, so if you are considering a humane-raised, pastured heritage turkey for your Thanksgiving table, they should be ordered in the spring! Are they worth it? Absolutely...they have earned their place on Slow Food International's Ark of Taste, and many chefs will prepare no other variety.
